Chocolate Chips Cookies
Ingredients:
1 cup (226gm) unsalted butter leave at room
temperature
100gm Brown Sugar Stevia
2 large eggs
1 ½ teaspoon vanilla extract
2 ¼ cup (295gm) all purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 ½ cup (270gm) semisweet chocolate chips
1 cup (100gm) walnut or pecan – coarsely
chopped (optional)
Methods:
- Preheat oven to 180C with rack in centre of oven. Line 2 baking sheets with baking paper
- In a bowl of electric mixer or with a hand mixer, beat the butter until smmothand creamy. Add Brown Sugar Stevia and beat until fluffy about 2mins
- Beat in eggs one at a time, making sure to beat well after each addition
- Add the vanilla extract and beat until well mix. Scrape down the side of the bowl as needed
- In a separate bowl, combine flour, baking soda and salt. Add the dry ingredients to the egg mixture and beat until mix well adding the chocolate chips & nut if using
- If you find the dough very soft, cover & refrigerate until firm (30 to 2 hours)
- Use a teaspoon and drop 1 teaspoon of the dough onto prepared baking sheets. Bake about 10 -12 mins or until golden brown.
