Banana Cake Brown Sugar With STEVIA – 2 Cakes 8” Mould
Ingredients:
Banana (Cut in smaller size) – 500 gm
Brown Sugar With Stevia/White Sugar With
Stevia –100 gm
Butter/Corn Oil – 250 gm
Eggs – 4
Full Cream UHT Milk – 200 ml
Self Rising Flour – 350 gm
Whole-meal Flour – 150 gm
Baking Soda – 10 gm
Pecan/Walnuts (Toasted) – 100 gm
Grated Carrot – 250 gm
Vanilla Essence – 10ml
Methods:
- Preheat oven to 175C
- Sift together self raising flour, baking soda & whole-meal flour
- Whisk (with a “K” beater) the Brown sugar Stevia and butter at medium speed for 2mins then add in eggs one at a time
- Add in banana, carrot and UHT milk and continue beating for 2mins
- Fold the flour mixture into the banana batter
- Spoon or pour into 2 of the 8” cake mould and bake for 40mins
